I made it!!

May 18, 2012 by Rika

I have been waiting for this day since, well, this day.I'M GOING TO ROATAN TOMORROW! AND I MUST WRITE IN ALL CAPS BECAUSE I AM VERY, VERY EXCITED ABOUT IT.For the next 8 days....You can find me here:And doing this:And eating these:And also doing this, lots of this:And a little bit of this:I figured out how to post from my iPhone, which I am bringing with me, so I think you all might get a post or two out of me while I'm away. Maybe even a sunny ...

Thanks people.

May 15, 2012 by Rika

Thank you to the people who leave tips in tip jars. You totally don't have to, it's not like I'm serving you at a restaurant or anything... I know you had to wait in line for 20 minutes to order your gelato, and then the server had to rush you a bit to order because we had people out the door and while we'd really love to give you 10 samples and tell you all about our amazing flavors, we just don't have the time when it's busy. But thank you for leaving us a tip anyway. Thank you for ...

When your brain starts to leave.

May 12, 2012 by Rika

I thought I was getting the hang of this working 70-80 hours a week thing. I wrote a post all about how to work two full-time jobs. I have perfected cooking a week's worth of breakfasts, lunches and dinners in one night - case in point, here is this week:I have been keeping all my menu planning for my weekly batch cooking - if anyone is interested just email me. It is mainly vegan/vegetarian/gluten-free food and I only spend about $45/week to feed one person 3 meals a day ...

Hi Taiwan, I see you.

May 9, 2012 by Rika

No, I haven't had a change of heart and decided to go to Taiwan, although it is on my "someday" list. Honduras is still #1 and I'm headed back in 10 days!As someone new on the blogging scene (for this blog anyway) - I know seasoned bloggers already know this - but looking at the stats for your blog when it starts is actually pretty exciting.I LOVE seeing where my readers are coming from! This week I have had lots of US, UK and Canada as usual, but also Taiwan, Indonesia, Russia and ...

Bigger and bigger and bigger.

May 7, 2012 by Rika

Today my bank account is about to grow in a big way - I am getting the money from selling my car! My lovely dad (who paid for 90% of the car in the first place when I was in high school) is buying my car back from me to give to my little brother. Everybody wins, except my dad who has now paid twice for this car, but he has a secret soft spot for El Diablo (yes, she has a name) and I know he's glad that it's staying "in the family" so I don't feel too bad about it. Plus, he knows the money ...

Money, where have you been all my life?

May 1, 2012 by Rika

Money! (Does anyone else instantly start singing the Pink Floyd song in their head?) Such a huge theme in my life right now. A constant source of frustration one minute and then happiness the next. It is driving me crazy but also driving me to Honduras.Source (a site with cheap traveling tips!)This is the first time in my life I have ever had a big bank account balance (big = more than $300 in my world!) and it's making me insane that I can't touch any of it. I ...

Motivation.

April 30, 2012 by Rika

As someone with ADD I find it incredibly difficult to keep my steam going in one direction, especially when it comes to long(ish) term plans....such as deciding to pack up your life and move to the Bay Islands in five months. I knew right from the start that this would be a challenge for me and so I had to prepare for it.This is my bedroom mirror where I sit in front of and get ready every single day. I have a 2 lempira bill on the mirror and every morning I force myself to look through my ...

A half day off.

April 29, 2012 by Rika

I slept in, had brunch with friends (my first meal out with friends in over a month), walked by the ocean with a tea, went around the neighborhood and took in the sights of the fluffy pink cherry trees, took a nap and then got ready for work. A 5:30pm shift is infinitely better than a 2:30pm shift.Less than three weeks until Roatan! I figured out how to post from my iPhone so there might even be a post or two from paradise. I posted this from my phone so we'll see what it looks like when I ...

If I had a million dollars.

April 27, 2012 by Rika

Right now the only thing I'm interested in is getting in my giant bed, cuddling up in my big down duvet and not moving for about 60 hours. Oy vey. I am continually amazed at how I function every day on 5 hours of sleep a night. The human body can adapt to pretty much anything I guess! And here's a tip of the day for those of you lucky enough to never have had to work in the service industry: when a store/restaurant closes at 10pm, it's fucking closed at 10pm. And unless you're my mom, you're ...
